Peanut Butter Bark

A couple of weeks ago, I bought some peanut butter chips. I've never gotten them before, so, obviously, I've never used them before. 

I thought, "There must be something yummy I can make with these."

So I bought two bags...just in case!


They have sat in Monstro (that is my pantry...it's a free standing monstrosity-hence the name-that I despise...giving it a funny name makes me like it better) for two weeks, waiting. And waiting. I had no idea what I wanted to make with them. I wanted something different, but I couldn't come up with anything. Then, last night, I thought, "I wish I had some peppermint bark." That's when inspiration struck! I made some chocolate and peanut butter bark!

For the chocolate part, you can use milk or semi-sweet. I chose to do semi-sweet because I prefer it.  Line a rimmed baking sheet with aluminum foil. I wanted thicker bark, so I made a foil "wall" down the middle of the pan, but this recipe works well spread over the entire pan.

In a bowl set over a pan of barely simmering water, melt two bags of chocolate chips. Spread the melted chocolate evenly over the foil in the pan, pushing it right to the edges. Next, use your spatula to tap the chocolate all over to make small peaks on the surface. This will help hold your peanut butter and chocolate together once they harden. I also like to sprinkle chopped peanuts on here, because that also helps hold them together.

Next, repeat the process with two bags of peanut butter chips. When spreading the peanut butter, it may mix up with the chocolate a little bit, but that's okay.

Don't you think these should be added somehow? Me too...

I chopped up about a half dozen mini peanut butter cups and sprinkled them over half of the mixture. Then I chopped up about half a cup of peanuts and sprinkled them over the other half. Both of these options turned out really tasty, but it's super good without any toppings at all, too. Allow this to set up for two to three hours or overnight before serving. Once hardened, cut into two to three inch squares.

As someone who isn't a peanut butter and chocolate fan, this is good! It only takes about 15 minutes from start to finish, so give it a shot! Enjoy!

Ingredients


2 - 12 ounce bags chocolate chips
2 - 10 ounce bags peanut butter chips
peanuts, chopped (optional)
mini peanut butter cups, chopped coarsely (optional)

In a bowl set over a pan of barely simmering water, melt the chocolate chips. With a rubber spatula, spread the melted chocolate evenly over the foil in the pan, pushing it right to the edges. Next, use your spatula to tap the chocolate all over to make small peaks on the surface. You can also sprinkle chopped peanuts on at this point.

Melt the peanut butter chips and spread the mixture over the chocolate. Sprinkle with chopped peanuts or mini peanut butter cups, if desired. Allow to set up for 2 to 3 hours or overnight. Cut into 2 to 3 inch squares and serve.
